Celebrate Cinco de Mayo with your Favorite Club

Whether you’re planning a fiesta or just craving Mexican food - we got you covered. One of our favorite ways to eat pimento chz is by making queso! This is such a fan favorite and a great appetizer for parties and events. 

Not only can you pair queso with your favorite tortilla chips and veggies, but you can also use it as a topping on your tostadas and tacos, add it to nachos, or mix it into your favorite chili or mac n’ cheese. The options are endless!

This recipe is inspired from my good friend Michelle Ferrand’s Blog Cup of Zest. Her site has everything you need for entertaining from party planning to cocktails and fuss free recipes to make you the hostess with the mostess. We turned her homemade queso recipe into a Pimento Chz Club friendly version. Winner winner queso dinner! I mean queso can just be dinner, right?

Ingredients:

  • 1 tablespoon unsalted butter

  • 1 finely chopped shallot 

  • 1 tablespoon finely chopped jalapeno about ½ jalapeno, seeded if you want it less spicy

  • 1 clove garlic, minced

  • 2 teaspoons all-purpose flour

  • 1 cup whole milk, divided

  • 2 ounces cream cheese, room temperature & cut into small pieces

  • 1 (8 ounce) container Green Chile Cilantro Pimento Chz Club

  • ¼ cup seeded and finely chopped tomato

  • 2 tablespoons chopped fresh cilantro

  • chips or crudite for serving serve

Instructions:

  1. Melt butter in a skillet over medium-low heat.

  2. Add shallot, jalapeno, and garlic. Cook, stirring occasionally until slightly softened, about 3 minutes.

  3. Add flour and stir constantly for 1 minute.

  4. Add 1/2 cup of milk and cream cheese. Whisking constantly, cook until thickened and smooth, about 2 minutes.

  5. Slowly whisk in the remaining 1/2 cup milk and cook until combined and starting to steam.

  6. Remove from heat, and add in pimento cheese. Whisk constantly until the cheese is melted, about 4 minutes.

  7. Stir in tomatoes and cilantro and serve immediately with chips!
