Spice Up Your Night with Pimento Chz Quesadillas!

Quesadillas are such a simple recipe that are sure to keep the whole family happy. While quesadillas are traditionally made with freshly grated cheese, we like to add our pimento cheese for a creamy and flavorful taste  - plus, it melts so great!

For a basic quesadilla, all you need is one tortilla and our Original Pimento Cheese (or use our Green Chile Cilantro for a spicier kick!) and you have yourself a meal! Of course, you can easily add your favorite vegetables and meats for a more upgraded dish. You can also turn this into a breakfast by using ham, bacon and eggs as a filling - the possibilities are endless!

Ingredients:

Optional Fillings and Toppings:

  • Pico de gallo

  • Sliced jalapenos

  • Chopped green onions

  • Shredded chicken or pork

  • Sauteed bell peppers

  • Fresh cilantro leaves

  • Scrambled eggs

  • Diced ham

  • Cooked bacon

  • Salsa

  • Sour cream

  • Guacamole

Directions:

  1. Heat oil or butter on a large skillet (cast iron works well) on medium heat. Add one large flour tortilla to the plan and flip it a few times until air pockets begint to form.

  2. Add a scoop of pimento cheese to the top of the tortilla and spread evenly.

  3. Add your additional toppings and then lower the heat and cover the pan. Continue checking the quesadilla every minute  until the cheese is melted. If the tortilla begins to smoke or brown too much, lower the heat. 

  4. Once the cheese has melted, use a spatula to lift one side of the tortilla and fold it over.  Continue cooking on low heat until the tortilla has browned.

  5. Remove from heat and top with salsa, sour cream, guacamole or try dipping it in our pimento chz inspired queso. Enjoy!
